These are perfect for an appetizer or party platter, they also just make a great snack you can pack on the go! Freeze these meatballs if you make a big batch then you can use them in the future for other soup or pasta recipes…

Ingredients:

1 lb organic grass fed ground beef, bison, turkey or combination of…

2 eggs; beaten well

1/2 onion; finely chopped

3 cloves garlic; minced

2 Tbsp oregano; finely chopped (this can be substituted with any fresh herbs you like)

1 jar organic tomato sauce

about 40 fresh basil leaves

1 lb organic mixed madly cherry or heirloom tomatoes; cut in wedges or halved

short bamboo skewers or long tooth picks

 

Mix together first five ingredients in large bowl and form small meatballs, about the size of a quarter. If freezing some of the meatballs, package up in freezable containers now. Simmer meatballs in the sauce until cooked through (this will take longer if they are frozen) and coated with sauce. Remove from sauce and wrap a basil leaf around each meatball and pierce with skewer, securing the basil leaf in place. Top each meatball with a wedge of heirloom tomato or a cherry tomato and continue to layer in this order with remaining meatballs, basil and tomatoes.
